Cocktail Bar Review: Bar Glue, Liverpool

A must-visit cocktail bar on the Albert Dock, Liverpool.

For unique and completely class cocktails in Liverpool city centre, it’d be hard to beat one of the city’s newest and most exciting cocktail bars; Bar Glue. Discover what makes this place a must-visit cocktail bar in Liverpool. Set back in Anchor Courtyard on the Albert Dock is where you’ll find the small but mighty Bar Glue – an intimate cocktail bar serving up some of the best drinks in the city. Liverpool wine lovers might remember this venue as Burnt Milk Hotel (one of my favourite wine bars in the city – RIP). But, it’s recently been taken over by the old Burnt Milk managers Mike Bower and Nathan Price (as well as Harriet Bower) and revamped into the neighbourhood cocktail bar, Bar Glue. Whilst I did mourn the loss of my beloved Burnt Milk, one visit to Bar Glue and I was fully on board with the switch-up – this place is epic.

Community is at the heart of Bar Glue, and it shows in their drinks menu. One look at their bespoke cocktail menu and you’ll notice some truly out-of-the-ordinary cocktail names on there. But what makes them each so special is that they’re all connected to stories and memories of friends and family of the staff at Bar Glue. When you pop in, be sure to ask them the story behind your cocktail – they’ll be more than happy to share it with you.

What to order at Bar Glue, Liverpool

Onto the drinks! I tried their ‘A Fox in the Outback’ cocktail; made with Del Maguey Vida Mezcal. I love a bit of Mezcal and Del Maguey Vida was one of the first Mezcals I tried so I was excited to try it out in one of their signature cocktails. As for the rest of the ingredients, Bar Glue listed dragonfruit, basil, celery, lime and coconut foam alongside it. The coconut foam sold me. I knew I had to see what the combination of smoky mezcal and sweet coconut would be like. Spoiler: it was beautiful.

Behind its surprisingly pink and cutesy appearance, the ‘A Fox in the Outback’ leads with the smokiness of the Mezcal before making way for the sweet hit of coconut foam – perfectly complementary. As someone who isn’t a fan of a sweet drink, I’m always a bit sad that often the prettiest-looking pink drinks are the sweet ones. So, I was pleasantly surprised that Bar Glue’s ‘A Fox in the Outback’ had all the smoky and strong flavour of my favourite cocktails BUT in a cute little pink presentation – a win-win.

I also tried a bit of the ‘Marigold’, a Patron Silver-based cocktail with St. Germain, carrot, honey, chilli and lime. This was well-balanced between the sweet and spice, and super refreshing. Another winner for sure. Next time though, I’ve got my eye on their ‘Baby Bear’, made with Martell VS Cognac, cava and bitters, with ‘brioche’, orange and bear claw.

For a seriously good cocktail in Liverpool City Centre, it’ll be a push to beat Bar Glue. Get it on your list.
