Happy Friday everyone! If you’ve been following my blog for a little while I’m sure you’ll know that I am a massive foodie and absolutely love cooking and sharing new recipes with you all! As a university student I have quite a few go-to recipes for when I need to whip up a quick meal in between lectures or before sports training so this recipe is a super quick, but delicious recipe for when you’re in a rush; Black Bean Rice.
I actually got this recipe from one of Jamie Oliver’s books where it’s used as a side, but I often just eat this as a main meal or a lunch by itself! I’m pretty sure this is a totally vegan (I’m not a vegan so don’t quote me on it!) and definitely a vegetarian recipe so hopefully it’s something that a lot of you might be able to give it a go!
2 spring onions
1 cinnamon stick
100 grams long-grain rice
300 ml vegetable stock
1/2 tin of black beans
Put a saucepan with a lid on a medium heat.
Add a good bit of olive oil and salt and pepper to the pan.
Finely slice the spring onions and put them into the saucepan with the cinnamon stick.
Stir and allow to soften for a minute or two, then add the rice and vegetable stock.
Drain and rinse the beans, then add to the pan.
Bring to the boil, then reduce to a medium heat. Pop the lid on and leave for 12 minutes.
I normally serve the rice with a bit of sweet chilli sauce or if I’m particularly hungry I’ll steam some salmon and serve that on the rice instead (again, probably with sweet chilli sauce as well – it’s an addiction).
