Mackerel Salad

This is a really easy-to-make salad that’s perfect for a filling lunch or a light dinner. Ideal for when you don’t have a lot of time available to make your evening meal but still want something substantial, this Mackerel Salad is also great for when you’re lost as to what to make yourself for dinner.  Even if you don’t have mackerel in stock, something like tinned tuna with a bit of light mayonnaise will work just as well.


1-2 mackerel fillets

1 handful of rocket, lightly washed

6 cherry tomatoes, halved

A spoonful of pomegranate seeds

Olive oil

Balsamic vinegar

Salt and pepper, for seasoning


 Using two forks, flake the mackerel fillets by pulling the meat with one fork and holding in place with the other

Grab the handful of rocket and place it onto your plate. Drizzle with balsamic vinegar and lightly toss it in your hands.

Scatter the majority of both the sliced tomatoes and pomegranate seeds over the rocket, leaving some behind for decoration

Spoon the mackerel on top of this into the centre of the plate

Sprinkle the remaining tomatoes and pomegranate seeds onto the mackerel

Finish off with salt and pepper, to your taste, and a drizzle of olive oil
